A warm and comforting dish filled with ground turkey, black beans, and cheese, wrapped in tortillas and baked to perfection.

Ingredients

  • 1 lb ground turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can enchilada sauce
  • 8 large flour or corn tortillas
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the ground turkey in a skillet over medium heat until browned.
  3. Add black beans, corn, cumin, chili powder, salt, and pepper; cook for another 5 minutes.
  4. Prepare a baking dish by spreading enchilada sauce in the bottom.
  5. Assemble each tortilla with a portion of the turkey mixture, roll them up, and place them seam-side down in the dish.
  6. Add the remaining enchilada sauce over the top and sprinkle with shredded cheese.
  7. Bake for 20-25 minutes, or until the cheese is bubbly and golden.
  8. Garnish with fresh cilantro if desired, and serve hot.

Notes

For a well-rounded meal, serve with Mexican rice or a crisp green salad topped with fresh avocado.
