A cozy casserole that marries the flavors of classic fajitas with the convenience of a one-dish meal, perfect for busy weeknights.

Ingredients

  • 2 cups shredded chicken
  • 1 can creamy soup (such as cream of chicken or mushroom)
  • 1 cup instant rice
  • 1 packet fajita seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup mixed veggies (bell peppers, onions, etc.)
  • 1/2 cup water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the shredded chicken, creamy soup, instant rice, fajita seasoning, and water in a large bowl. Mix well until everything is incorporated.
  3. Stir in the mixed veggies until evenly mixed.
  4. Transfer the mixture to a greased baking dish and spread it out evenly.
  5. Top the casserole with shredded cheese.
  6. Cover the dish with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  8. Let it cool for a few minutes before serving.

Notes

For a spicier kick, add sliced jalapeños or increase the fajita seasoning. Experiment with different creamy soups for varied flavors.
