Ferrero Rocher Macarons

Delicate macarons infused with the luxurious flavors of hazelnuts and chocolate, inspired by the iconic Ferrero Rocher.

Ingredients

  • 125g almond flour
  • 225g powdered sugar
  • 100g egg whites
  • 30g granulated sugar
  • 1/4 teaspoon cream of tartar
  • 200g dark chocolate
  • 100g heavy cream
  • 50g hazelnut spread
  • Chopped hazelnuts (for garnish)

Instructions

  1. Preheat the oven to 150°C (300°F).
  2. In a bowl, mix the almond flour and powdered sugar thoroughly.
  3. Whip the egg whites with cream of tartar until foamy.
  4. Gradually add granulated sugar and continue whipping until stiff peaks form.
  5. Gently fold the almond mixture into the whipped egg whites.
  6. Pipe rounds onto a baking sheet lined with parchment paper, about 3cm in diameter.
  7. Let them sit for 30 minutes to form a skin.
  8. Bake for 15-20 minutes until they lift easily off the parchment.
  9. Heat the heavy cream until it begins to simmer, then pour it over the chopped dark chocolate.
  10. Stir until smooth and add hazelnut spread.
  11. Fill half of the macaron shells with ganache and top with another shell.
  12. Garnish with chopped hazelnuts if desired.

Notes

Ensure bowls and utensils are grease-free for best results. Consider aging egg whites for improved volume.
