  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper (adjust to taste)
  • Oil for frying
  • 1/2 cup honey (for the glaze)
  • 1/4 cup soy sauce (for the glaze)
  • 1/4 cup rice vinegar (for the glaze)
  • 2 tablespoons sriracha sauce (for the glaze, adjust to taste)
  • 1 tablespoon sesame oil (for the glaze)
  • 2 cloves garlic, minced (for the glaze)
  • 1 tablespoon grated fresh ginger (for the glaze)
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Marinate the chicken. In a bowl, mix the chicken pieces with salt, black pepper, garlic powder, onion powder, and cayenne pepper. Let it marinate for at least 30 minutes to an hour in the refrigerator.
  2. Prepare the coating. In one bowl, whisk together the flour and cornstarch. In another bowl, beat the eggs and set aside.
  3. Heat oil in a deep frying pan or wok over medium-high heat for frying the chicken.
  4. Dredge each piece of marinated chicken in the flour and cornstarch mixture, shaking off any excess flour.
  5. Dip the floured chicken pieces into the beaten eggs.
  6. Return the chicken to the flour mixture for a second coating.
  7. Carefully place the coated chicken pieces into the hot oil. Fry in batches for about 5-7 minutes or until golden brown and cooked through.
  8. Prepare the sweet tangy glaze. In a saucepan, combine honey, soy sauce, rice vinegar, sriracha sauce, sesame oil, minced garlic, and grated ginger. Bring to a simmer until it thickens slightly.
  9. Once all the chicken is fried, place it in a large mixing bowl and pour the glaze over the chicken.
  10. Transfer the glazed chicken to a serving platter. Garnish with sliced green onions and sesame seeds before serving.

Notes

For maximum flavor, let the chicken marinate longer than the minimum time. Ensure your oil temperature is correct to achieve crispiness.
