A comforting and cheesy dish featuring succulent chicken breasts coated in a smoky spice blend and topped with zesty salsa and creamy queso.

  • 4 boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup salsa (mild or spicy)
  • 1 cup queso dip
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Optional: sliced jalapeños for added spice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together the garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper in a small bowl.
  3. Pat the chicken breasts dry with paper towels. Rub the spice blend evenly over both sides of each chicken breast.
  4. Heat a tablespoon of olive oil in a large oven-safe skillet over medium heat. Add the seasoned chicken breasts and sear for about 3-4 minutes on each side.
  5. Pour the salsa evenly over the chicken breasts.
  6. Spoon the queso dip over the salsa-covered chicken and spread it out.
  7. Sprinkle the shredded cheddar cheese on top of the queso dip.
  8. Transfer the skillet to the preheated oven and bake for 25-30 minutes.
  9. Remove the skillet from the oven and let it rest for about 5 minutes.
  10. Garnish with chopped fresh cilantro and optional sliced jalapeños before serving.

Notes

Pair with rice or tortillas to soak up juices. Store leftovers in an airtight container in the fridge for up to three days.
