Delightfully fluffy and guilt-free pancakes made without flour, packed with protein for a healthy breakfast.

Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • Cooking oil or butter, for the pan
  • Optional toppings: fresh fruits, maple syrup, Greek yogurt, or nut butter

Instructions

  1. Combine the cottage cheese, eggs, vanilla extract, baking powder, and salt in a medium bowl.
  2. Preheat a non-stick skillet over medium heat with a little cooking oil or butter.
  3. Scoop about 1/4 cup of batter onto the skillet for each pancake.
  4. Cook for 2-3 minutes until edges set and bubbles form.
  5. Flip each pancake carefully and cook for another 2-3 minutes until golden brown.
  6. Plate the pancakes and repeat with the remaining batter.
  7. Serve warm with your choice of toppings.

Notes

For fluffier pancakes, let the batter sit for a few minutes before cooking. Freezing the pancakes works well for later meals.
