Ingredients

  • 1 cup sugar
  • 4 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.
  2. Combine the almond flour, sugar, baking powder, and a pinch of salt in a large bowl.
  3. Mix the eggs, melted butter, lemon juice, lemon zest, and vanilla extract in another bowl.
  4. Blend the wet ingredients into the dry ingredients until well combined.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack.
  8. Serve with powdered sugar or whipped cream, if desired.
