  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix together the almond flour, powdered sugar, and salt in a bowl.
  3. Whisk the eggs until fluffy, then add the vanilla extract, lemon juice, and lemon zest.
  4. Fold the wet ingredients into the dry ingredients until fully incorporated.
  5. Drop dollops of dough onto the prepared baking sheet, spacing them out.
  6. Bake for 10-12 minutes, or until the edges are lightly golden.
  7. Cool on the baking sheet before transferring to a wire rack.
