  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 tablespoon sugar
  • Pinch of salt
  • Butter or oil for cooking
  • Maple syrup and whipped cream for serving (optional)

Instructions

  1. Whisk together the eggs, milk, and vanilla extract until smooth and slightly frothy.
  2. Mix the all-purpose flour, baking powder, sugar, and a pinch of salt in another bowl.
  3. Fold the dry ingredients into the wet ingredients until just combined.
  4. Heat a non-stick skillet over low heat and add butter or oil.
  5. Pour a small amount of pancake batter into the skillet to form a thick, round pancake.
  6. Cook for about 4-5 minutes until bubbles form, then flip and cook for another 4-5 minutes.
  7. Repeat with remaining batter.
  8. Serve warm with maple syrup and whipped cream if desired.

Notes

Cook pancakes over low heat for best results. Do not overmix the batter to ensure fluffiness.
