Instructions

  1. Combine Dry Ingredients: In a bowl, mix flour, sugar, baking powder, and salt together until evenly combined.
  2. Whisk Wet Ingredients: In another bowl, whisk the milk, egg yolks, vegetable oil, and vanilla extract.
  3. Mix Wet and Dry: Carefully combine the wet and dry ingredients until just mixed.
  4. Whip Egg Whites: In a separate bowl, whip the egg whites until stiff peaks form.
  5. Fold in the Egg Whites: Gently fold the whipped egg whites into the batter.
  6. Prepare the Skillet: Heat a non-stick skillet over low heat and lightly grease it.
  7. Pour the Batter: Pour 1/4 cup of batter onto the skillet and cover with a lid.
  8. Cook the First Side: Cook for about 4-5 minutes, then flip and cook for another 3-4 minutes.
  9. Serve Warm: Serve warm with a drizzle of maple syrup or fresh fruit.
