  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons orange zest
  • 1 cup fresh orange juice
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons milk (for glaze)
  • 1 teaspoon vanilla extract (for glaze)
  • 1 tablespoon fresh orange juice (for glaze)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and orange zest until evenly distributed.
  3. Combine the orange juice, milk, vegetable oil, eggs, and vanilla extract in a separate bowl; whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined.
  5. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  6. Bake for 18–20 minutes or until a toothpick inserted comes out clean.
  7. Prepare the glaze by whisking together the powdered sugar, milk, vanilla extract, and fresh orange juice until smooth.
  8. Drizzle the glaze over the cooled muffins and allow it to set before serving.

Notes

For best results, use fresh oranges for zest and juice. Store muffins in an airtight container at room temperature for up to 2 days.
