Delicious and convenient freezer breakfast sandwiches made with eggs, cheese, and your choice of meat, perfect for busy mornings.

Ingredients

  • 6 English muffins
  • 6 eggs
  • 6 cheese slices
  • 6 cooked sausage patties or slices of bacon
  • Salt, to taste
  • Pepper, to taste
  • Butter or oil, for greasing

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk the eggs with salt and pepper until fluffy.
  3. Grease a muffin tin with butter or oil.
  4. Fill the muffin cups with egg mixture, about three-quarters full.
  5. Bake for 15-20 minutes, until eggs are set.
  6. Toast the English muffins until lightly golden.
  7. Assemble the sandwiches with an egg, slice of cheese, and sausage or bacon.
  8. Add the top half of the muffin.
  9. Wrap each sandwich in foil or plastic wrap and freeze.
  10. Reheat in the microwave for 1-2 minutes when ready to enjoy.

Notes
