  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp salt
  • 1 cup vegetable oil
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups peeled and diced apples (preferably Granny Smith)
  • 1 cup chopped walnuts or pecans (optional)
  • For the Cream Cheese Frosting:
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Prepare Your Ingredients by preheating your oven to 350°F (175°C) and greasing a 9×13-inch baking pan.
  2. Mix the Dry Ingredients in a large mixing bowl, whisking together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. Combine the Wet Ingredients in another bowl by mixing the vegetable oil and granulated sugar, then beat in the eggs one at a time.
  4. Merge the Mixtures by carefully folding the dry ingredients into the wet mixture until just combined.
  5. Add the Apples (and Nuts) by gently folding in the diced apples and nuts, if using.
  6. Bake to Perfection by pouring the batter into the prepared pan and baking for 45-50 minutes until a toothpick comes out clean.
  7. Let It Cool for about 10 minutes before transferring to a wire rack.
  8. Make the Cream Cheese Frosting by beating together the softened cream cheese and butter, then gradually mixing in the powdered sugar and vanilla.
  9. Frost the Cake by spreading the cream cheese frosting generously over the cooled cake.
