A refreshing and light recipe for BLT chicken salad wrapped in crispy romaine lettuce, combining tender chicken, crispy bacon, and creamy dressings.

  • 2 cups cooked chicken breast, diced
  • 4 slices bacon, cooked and crumbled
  • 8 leaves romaine lettuce
  • 1 medium tomato, diced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons light mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1/2 avocado, diced
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon sea salt
  • 1 tablespoon chopped fresh chives

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy and then crumble it after draining.
  2. Prepare the chicken salad by combining the diced chicken, bacon, tomato, red onion, avocado, mayonnaise, yogurt, lemon juice, garlic powder, black pepper, and sea salt in a bowl.
  3. Mix all ingredients together gently until well combined.
  4. Assemble the lettuce wraps by laying out the romaine leaves and distributing the chicken salad onto each leaf.
  5. Garnish with fresh chives and serve immediately to enjoy the flavors.

Notes

These wraps are best enjoyed fresh, but the chicken salad mixture can be stored for up to 2 days.
