  • 4 medium Potatoes
  • 2 tablespoons Oil
  • Salt, to taste
  • Pepper, to taste
  • 1 Onion (optional)
  • 2 cloves Garlic (optional)

Instructions

  1. Prepare the Vegetables: Cut the cabbage into small pieces and slice the potatoes into thin rounds.
  2. Heat the Oil: In a large skillet, heat oil over medium-high heat.
  3. Sauté the Potatoes: Add the potatoes to the skillet and cook until they start to soften, about 8 minutes.
  4. Combine the Cabbage: Add the cabbage (and onion/garlic if using) to the skillet.
  5. Season Generously: Season the mixture with salt and pepper to taste.
  6. Cook Until Crispy: Cook, stirring occasionally, until the potatoes are crispy and the cabbage is tender, about 10-12 minutes.
  7. Serve Hot: Once cooked, serve the Fried Cabbage and Potatoes hot.

Notes

Uniform slices ensure even cooking. Use high smoke point oil for frying. Can add pancetta or bacon for extra flavor.
