A simple and delicious way to transform leftover rice into a satisfying meal, filled with colorful vegetables and delightful flavors.

Ingredients

  • 4 cups cooked rice (preferably chilled)
  • 2 tablespoons vegetable oil
  • 3 tablespoons soy sauce
  • 2 large eggs
  • 2 green onions, diced
  • 1 cup peas and carrots (frozen or fresh)
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Scramble the eggs in the hot oil until fully cooked, then remove from the pan.
  3. Break up the cooked rice and add it to the pan.
  4. Mix in the soy sauce, peas, carrots, and scrambled eggs.
  5. Season with salt and pepper to taste.
  6. Cook everything together until heated through and garnish with green onions.

Notes

Use day-old rice for the best texture. It’s a versatile dish that can include any vegetables you have on hand.
