Ingredients

Scale
  • 1 pound cod fillets
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup butter

  • 1 teaspoon lime zest

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix together the flour, cornmeal, salt, pepper, and paprika in a shallow bowl.
  3. Cut the cod fillets into strips and dip each strip into the flour mixture.
  4. Melt the butter in a large skillet over medium heat and add the minced garlic.
  5. Fry the coated cod strips until golden brown on both sides, about 3-4 minutes per side.
  6. Bake the fried cod strips on a baking sheet for about 10 minutes.
  7. Mix the sweet chili sauce, lime juice, and lime zest in a small bowl.
  8. Drizzle the sweet chili lime sauce over the cod strips just before serving.

Notes

For an even crunchier coating, double-coat the cod strips. Substitute cod with other white fish for variation.
