A comforting and delicious garlic parmesan chicken meatloaf that brings warmth and nostalgia to family dinners.

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley
  • 3 cloves minced garlic
  • 1/2 finely chopped onion
  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup garlic powder
  • 1/4 cup additional grated Parmesan cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a baking sheet with parchment paper or grease a loaf pan.
  3. Mix together ground chicken, breadcrumbs, Parmesan, mozzarella, parsley, garlic, and onion in a large bowl.
  4. Whisk the eggs, milk, Worcestershire sauce, Italian seasoning, salt, and pepper in a separate bowl.
  5. Combine the egg mixture into the chicken mixture and mix gently until combined.
  6. Shape the meatloaf mixture into an even loaf on the prepared baking sheet or in the loaf pan.
  7. Prepare the topping by mixing garlic powder and additional Parmesan in a small bowl.
  8. Bake for 45-50 minutes, until the internal temperature reaches 165°F (74°C).
  9. Rest the meatloaf for about 10 minutes before slicing.
  10. Slice and serve warm with your favorite sides.

Notes

This meatloaf is freezer-friendly. Wrap and freeze for up to 3 months.
