A bright and tangy salad featuring cheese tortellini, fresh basil, and cherry tomatoes, all tossed in a delicious balsamic dressing.

  • 1 package cheese tortellini
  • 1 cup fresh basil, chopped
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1/4 cup Parmesan cheese, grated

Instructions

  1. Cook the tortellini according to the package instructions in salted boiling water until al dente, then drain and set aside.
  2. Combine the drained tortellini with chopped basil and halved cherry tomatoes in a large mixing bowl.
  3. Whisk together minced garlic, balsamic vinegar, olive oil, salt, and pepper in a separate bowl until well combined.
  4. Toss the salad gently with the dressing, ensuring all ingredients are coated.
  5. Chill in the refrigerator for at least 20 minutes to allow flavors to meld.
  6. Serve cold, garnished with freshly grated Parmesan cheese.

Notes

For extra crunch, consider adding diced bell peppers or cucumbers. This salad is best enjoyed within a couple of days.
