A colorful array of roasted vegetables infused with garlic and herbs, perfect as a side dish for any meal.

Ingredients

  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup sliced carrots
  • 1 cup bell peppers (red, yellow, or orange)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme or rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Chop the broccoli, cauliflower, carrots, and bell peppers into bite-sized pieces.
  3. Toss the chopped vegetables with olive oil, minced garlic, and your chosen herbs.
  4. Season with salt and pepper to taste.
  5. Spread the vegetables evenly on a baking sheet.
  6. Roast in the oven for 25-30 minutes, stirring halfway through.
  7. Serve warm as a side dish.
