A delightful and guilt-free treat featuring fruity flavor in convenient, healthy gelatin cubes.

Ingredients

  • 4 cups fruit juice (cranberry, orange, or mixed berry)
  • 4 tablespoons unflavored gelatin powder
  • 2 tablespoons honey or stevia
  • 1 cup cold water
  • 2 tablespoons fresh lemon juice
  • Optional: fresh mint leaves for garnish

Instructions

  1. Pour 1 cup of cold water into a medium bowl and sprinkle the gelatin powder evenly over the surface. Let it sit for 5 minutes to bloom until it becomes thick and spongy.
  2. In a saucepan over medium heat, warm the fruit juice until hot but not boiling. Add the sweetener and lemon juice, stirring until dissolved. Remove from heat.
  3. Add the bloomed gelatin to the hot juice mixture and whisk continuously until the gelatin completely dissolves and the mixture is smooth.
  4. Pour the mixture into a 9×13 inch baking dish. Let it cool to room temperature for 30 minutes, then transfer to the refrigerator.
  5. Refrigerate for at least 4 hours or overnight until completely firm.
  6. Cut into 1-inch cubes using a sharp knife dipped in warm water. Store in an airtight container.

Notes

Customize flavors by using different fruit juices or adding flavored extracts. Serve with mint for added flair.
