A moist and sweet gluten-free banana bread made with almond flour, perfect for breakfast or as a snack.

Ingredients

  • 3 ripe bananas, mashed
  • 2 cups almond flour
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the mashed bananas, honey (or maple syrup), eggs, melted coconut oil, and vanilla extract in a large bowl. Mix well.
  3. Whisk together almond flour, baking soda, salt, and cinnamon (if using) in another bowl.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 45-55 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

This banana bread tastes great warm or at room temperature. It can be served plain or with a spread.
