A comforting Cheese and Onion Pie featuring rich cheddar and sweet caramelized onions, enveloped in flaky puff pastry.

Ingredients

  • 500g puff pastry
  • 200g mature cheddar cheese, grated
  • 100g cream cheese
  • 2 large onions, finely chopped
  • 2 tablespoons butter
  • 1 large egg, beaten
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Sauté the onions in melted butter over medium heat until soft and translucent, about 5-7 minutes.
  3. Mix the mature cheddar, cream cheese, and cooked onions in a bowl; season with salt and pepper.
  4. Prepare the puff pastry by rolling it out and lining a pie dish with half of it.
  5. Fill the pastry base with the cheesy onion mixture, spreading it evenly.
  6. Seal the pie by covering it with the remaining pastry and sealing the edges.
  7. Brush the top with beaten egg for a golden finish.
  8. Bake for 30-35 minutes until golden brown and bubbling.
  9. Cool slightly before slicing and serving.

Notes

Pair with a fresh salad or steamed vegetables. Store leftovers in an airtight container for up to 3 days.
