A rich and hearty Irish lamb stew perfect for cozy gatherings, filled with succulent lamb and earthy root vegetables.

  • 2 pounds lamb shoulder, cut into cubes
  • 4 tablespoons olive oil
  • 2 onions, chopped
  • 3 carrots, diced
  • 3 parsnips, diced
  • 4 garlic cloves, minced
  • 4 cups beef or lamb stock
  • 2 cups potatoes, diced
  • 2 sprigs of thyme
  • 1 bay leaf
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Searing the Lamb: In a large pot, heat the olive oil over medium heat. Add the lamb cubes and sear until browned on all sides.
  2. Removing the lamb: Remove the lamb and set aside. In the same pot, add the chopped onions, diced carrots, and diced parsnips. Cook for about 5 minutes until the vegetables start to soften.
  3. Aromatic Infusion: Add the minced garlic and cook for another minute.
  4. Combining Ingredients: Return the seared lamb to the pot and add the stock, diced potatoes, thyme, bay leaf, tomato paste, Worcestershire sauce, salt, and pepper.
  5. Bringing to a Boil: Bring the stew to a boil over high heat, then reduce the heat and let it simmer gently.
  6. Long Simmering: Allow the stew to simmer for about 2 hours until the lamb becomes tender.
  7. Final Touches: Once finished, remove the thyme sprigs and bay leaf before serving.

Notes

This stew pairs beautifully with soda bread or mashed potatoes and can be adjusted with different vegetables or meats.
