A nostalgic no-bake dessert with a vibrant green hue and cool minty flavor, perfect for celebrations and special occasions.

Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 1/2 cup heavy cream
  • 1/2 cup sweetened condensed milk
  • 1/2 cup green crème de menthe
  • 1/2 cup white crème de cacao
  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • Chocolate shavings or mint leaves for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine the chocolate cookie crumbs and melted butter until the mixture resembles wet sand. Press it into the bottom and up the sides of a pie pan. Bake for 10 minutes to set the crust, then remove from the oven and allow to cool completely.
  2. Bloom the unflavored gelatin over the cold water and let it bloom for about 5 minutes. After blooming, gently heat the mixture while stirring until the gelatin is completely dissolved.
  3. Whip the heavy cream until soft peaks form, creating that delicious light texture.
  4. Combine the sweetened condensed milk, green crème de menthe, and white crème de cacao in another bowl until well blended.
  5. Mix in the dissolved gelatin into the liquid mixture, stirring continuously. Carefully fold in the whipped cream until just mixed.
  6. Fill the crust with the mint filling, smoothing it into an even layer. Refrigerate for at least 4 hours until set.
  7. Serve the Grasshopper Pie chilled, garnished with chocolate shavings or fresh mint leaves.

Notes

For perfectly whipped cream, chill your mixing bowl and beaters beforehand. Substitute peppermint extract for crème de menthe if needed.
