  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup red onion, finely chopped

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

  • 1/2 cup cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 2 cucumbers, sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil (for salad)
  • 1 tablespoon red wine vinegar

Instructions

  1. In a bowl, combine the ground chicken, breadcrumbs, egg, finely chopped red onion, minced garlic, parsley, oregano, cumin, salt and pepper until just mixed. Be gentle; overmixing can lead to tough patties!
  2. Shape the mixture into eight equal-sized patties, making sure they’re nice and round. Place them on a plate for easy access when you’re ready to fry.
  3. Heat two tablespoons of olive oil in a skillet over medium heat. Once hot, place the patties in the skillet and cook for about four to five minutes on each side until golden brown and cooked through. The aroma will be delightful!
  4. While the patties are cooking, let’s whip up the tzatziki. In another bowl, combine Greek yogurt, grated cucumber (drained to avoid excess water), minced garlic, dill, lemon juice, salt, and pepper. Stir until everything is well combined, then cover and refrigerate to let those flavors meld together.
  5. In a separate bowl, toss together the sliced cucumbers and thinly sliced red onion with olive oil, red wine vinegar, and a pinch of salt and pepper. This simple salad will add a crisp freshness to your meal!
