A quick yet sumptuous dish featuring tender marinated chicken breasts topped with crumbled feta cheese, perfect for busy weeknights.

  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 large lemons (juice)
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper in a large bowl. Add the chicken breasts and coat thoroughly. Marinate in the refrigerator for at least 30 minutes.
  2. Heat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for 7-8 minutes on each side until the internal temperature reaches 165°F (75°C).
  3. Sprinkle the crumbled feta cheese over the chicken during the last few minutes on the grill to melt slightly.
  4. Remove the chicken from the grill and let it rest for about 5 minutes to retain juices.
  5. Garnish with chopped fresh parsley before serving warm, paired with a Greek salad or roasted vegetables.

Notes

For extra flavor, consider marinating the chicken overnight. This dish is low in carbs and can be adapted with different herbs.
