A creamy and decadent twist on a classic dessert, combining tangy cheesecake filling with honey and toasted pistachios, all nestled in a buttery graham cracker crust.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/4 cup Greek yogurt
  • 1/2 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1/2 cup pistachios, chopped and toasted
  • 2 tablespoons honey (for drizzling)

Instructions

  1. Preheat the oven to 350°F and line an 8×8-inch pan with parchment paper.
  2. Combine graham cracker crumbs, sugar, and salt in a medium bowl.
  3. Stir in melted butter until evenly moistened.
  4. Press the mixture into the prepared pan and bake for 8-10 minutes until golden brown.
  5. Reduce the oven temperature to 325°F and beat softened cream cheese until smooth.
  6. Add Greek yogurt, honey, eggs, vanilla, and lemon zest and mix until smooth.
  7. Pour the filling over the cooled crust and smooth it out with a spatula.
  8. Bake for 25-30 minutes until set but slightly jiggly in the center.
  9. Cool to room temperature and then refrigerate for at least 3 hours.
  10. Drizzle with extra honey and sprinkle with chopped pistachios before serving.

Notes

Ensure cream cheese is at room temperature for a smooth mixture. You can substitute walnuts for pistachios or use a combo for more texture.
