  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges for serving

Instructions

  1. Prepare the marinade by combining olive oil, fresh lemon juice, dried oregano, garlic powder, onion powder, salt, and pepper in a bowl.
  2. Marinate the chicken by adding it to the marinade, covering, and refrigerating for at least 30 minutes.
  3. Preheat the oven to 400°F (200°C) and bring the chicken to room temperature.
  4. Sear the marinated chicken in a hot skillet for 3-4 minutes on each side until golden-brown.
  5. Add crumbled feta cheese and sliced Kalamata olives on top of the chicken.
  6. Bake in the oven for 20-25 minutes until cooked through.
  7. Garnish with fresh parsley and serve hot with lemon wedges.
