  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1/4 cup fresh lemon juice
  • 1 lemon, sliced
  • Olive oil for frying

Instructions

  1. Mix the Meatball Ingredients: In a large bowl, combine the ground meat, breadcrumbs, grated Parmesan cheese, chopped parsley, egg, minced garlic, oregano, salt, and pepper. Mix until everything is well incorporated. Form the mixture into small meatballs, about an inch in diameter.
  2. Brown the Meatballs: Heat olive oil in a large skillet over medium heat. Add the meatballs in batches, frying until browned on all sides, about 8 minutes. Remove and set aside.
  3. Create the Lemon Sauce Base: In the same skillet, add chicken broth and fresh lemon juice, scraping up any browned bits. Bring to a gentle simmer.
  4. Simmer the Meatballs: Return the meatballs to the skillet, placing lemon slices atop. Cover and simmer for 5-10 minutes, allowing flavors to meld.
  5. Serve and Enjoy: Serve warm, with a refreshing side salad or over fluffy rice.

Notes

Leftover meatballs can be stored in an airtight container in the fridge for up to 4 days. They freeze well if separated from the sauce.
