A vibrant recipe combining lemon-infused chicken and creamy feta, perfect for any dinner table.

  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 large lemons (juice)
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Start by patting the chicken breasts dry with paper towels and seasoning them with salt and pepper.
  2. In a mixing bowl, whisk together the olive oil, lemon juice, garlic, and oregano for the marinade.
  3. Place the chicken in a large resealable bag or shallow dish and pour the marinade over it. Seal or cover and marinate for at least 15 minutes.
  4. Heat a large skillet over medium-high heat and add the marinated chicken, discarding the leftover marinade. Cook for 6-7 minutes on each side until cooked through.
  5. In the final minute of cooking, sprinkle the crumbled feta cheese over the chicken.
  6. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  7. Slice the chicken and plate beautifully, drizzling any remaining juices over the top and garnishing with fresh parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. You can freeze the chicken (without feta) for up to a month.
