A flavorful recipe for grilled Greek chicken thighs wrapped in pita with fresh toppings and tzatziki sauce.

  • 2 lbs boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 34 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • Pita bread
  • Optional toppings: diced cucumber, chopped tomatoes, sliced red onion, feta cheese, tzatziki sauce

Instructions

  1. Marinate the chicken: In a large bowl, combine the olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper. Add the chicken thighs and cover. Refrigerate for at least 30 minutes.
  2. Preheat the grill to medium-high heat.
  3. Grill the chicken for about 5-7 minutes on each side until fully cooked.
  4. Rest the chicken for 5 minutes then slice into strips.
  5. Assemble your gyros with pita, grilled chicken, and toppings.
  6. Drizzle with tzatziki sauce before serving.
