  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 34 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • Pita bread
  • Optional toppings: diced cucumber, chopped tomatoes, sliced red onion, feta cheese, tzatziki sauce

Instructions

  1. Marinate the Chicken: In a large bowl, combine the olive oil, freshly squeezed lemon juice, minced garlic, dried oregano, ground cumin, and a generous sprinkle of salt and pepper. Add the chicken thighs, ensuring they’re well-coated. Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  2. Preheat the Grill: While the chicken is marinating, fire up your grill over medium-high heat.
  3. Grill the Chicken: Once marinated, place the chicken thighs on the grill, cooking for about 5-7 minutes on each side until they reach an internal temperature of 165°F.
  4. Rest and Slice the Chicken: After grilling, let the chicken rest for a few minutes before slicing into thin strips.
  5. Assemble Your Gyros: Grab warm pita bread and add sliced chicken in the center. Top with diced cucumber, chopped tomatoes, sliced red onion, and a sprinkle of feta cheese.
  6. Drizzle with Tzatziki: Finish off with a generous drizzle of tzatziki sauce, then fold your pita around the fillings.
