  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup corn (fresh or canned)
  • 1 can black beans, drained and rinsed
  • 2 cups cooked rice (white or brown)
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Taco sauce or salsa (for serving)

Instructions

  1. Sautéing onions and garlic in olive oil until translucent.
  2. Brown the turkey, breaking it apart, until browned.
  3. Add taco seasoning, corn, and black beans; cook for 5 minutes until heated.
  4. Assemble bowls with rice, turkey mixture, tomatoes, lettuce, and cheese.
  5. Garnish with taco sauce or salsa as desired.
