A light and airy soufflé infused with rich Gruyère cheese and fresh chives, perfect for brunch or a cozy dinner.

Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 cup grated Gruyère cheese
  • 1/4 cup chopped fresh chives
  • 4 large eggs, separated
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Melt the butter in a saucepan over medium heat.
  3. Whisk in the flour and cook for 1 minute.
  4. Add the milk and cook until thickened.
  5. Stir in the salt, pepper, nutmeg, Gruyère cheese, and chives.
  6. Incorporate the egg yolks into the mixture.
  7. Beat the egg whites with cream of tartar until stiff peaks form.
  8. Fold the egg whites into the cheese mixture gently.
  9. Pour the combined mixture into a greased soufflé dish.
  10. Bake for 25-30 minutes or until puffed and golden.
  11. Serve immediately, garnished with additional chives if desired.

Notes

For best results, use fresh ingredients and avoid opening the oven door while baking.
