Delicate French macarons infused with tropical guava, filled with a creamy guava buttercream.

  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon guava puree
  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar (for buttercream)
  • 1/4 cup guava puree (for buttercream)
  • 1 teaspoon vanilla extract

Instructions

  1. Sift the Dry Ingredients: In a bowl, sift together the almond flour and 1 3/4 cups of powdered sugar.
  2. Whip the Egg Whites: In another bowl, whisk the egg whites until frothy and add the granulated sugar gradually.
  3. Flavor the Meringue: Gently fold in the 1/2 teaspoon of guava puree into the meringue.
  4. Combine Dry Ingredients and Meringue: Carefully fold the almond flour mixture into the meringue.
  5. Pipe the Macaron Shells: Transfer the batter into a piping bag and pipe small circles onto parchment paper.
  6. Let the Macarons Rest: Let the piped macarons sit at room temperature until a firm skin forms.
  7. Bake to Perfection: Preheat your oven and bake the macarons for 15-20 minutes.
  8. Prepare the Buttercream: Beat the softened butter until creamy, then add powdered sugar, guava puree, and vanilla.
  9. Assemble the Macarons: Once the shells are cool, pipe guava buttercream onto half and sandwich with the other half.

Notes

Store in an airtight container in the refrigerator for up to a week. Can freeze for up to a month.
