  • 1 pound Ground beef (ensure it’s Halal-certified)
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 cups Frozen mixed vegetables (like peas and carrots)
  • 4 cups Potato slices (fresh or frozen)
  • 1 can Cream of mushroom soup (Halal-friendly)
  • 2 cups Shredded cheese (e.g., cheddar, or your choice)
  • To taste Salt and pepper
  • 1 tablespoon Olive oil (for cooking)
  • 1 teaspoon Paprika (for a touch of flavor)

Instructions

  1. Start by heating the olive oil in a large skillet over medium heat. Add the diced onions and minced garlic, sautéing until fragrant and the onions are translucent—about 3-4 minutes.
  2. Next, add the ground beef to the skillet, breaking it up with a spatula. Cook until it’s browned and no longer pink, about 5-7 minutes. Season with salt, pepper, and paprika.
  3. Stir in the frozen mixed vegetables, allowing them to thaw and incorporate with the beef. Cook for another 5 minutes.
  4. Pour in the can of cream of mushroom soup, mixing well to create a cohesive filling for your casserole.
  5. In a large baking dish, start layering with potato slices, covering the bottom evenly.
  6. Next, pour the beef and vegetable mixture over the potato layer, spreading it out evenly. Then, add another layer of potato slices on top.
  7. Sprinkle the shredded cheese generously over the top layer of potatoes. Cover the dish with aluminum foil.
  8. Bake in a preheated oven at 375°F (190°C) for about 30 minutes. After this time, remove the foil and bake for an additional 10-15 minutes.
  9. Once out of the oven, let the casserole cool for a few minutes before serving.

Notes

This casserole can be stored in an airtight container in the refrigerator for up to 3-4 days or frozen for up to 2 months. Reheat in the oven for best texture.
