Delicious gluten-free cookies made with almond flour and dark chocolate chips, perfect for a healthier treat.

Ingredients

  • 2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil (melted)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the almond flour, baking soda, and salt in a medium bowl.
  3. Combine the melted coconut oil, honey or maple syrup, and vanilla extract in another bowl. Mix until well blended.
  4. Pour the wet ingredients into the bowl of dry ingredients. Stir until the mixture forms a soft dough.
  5. Fold in the dark chocolate chips until evenly distributed throughout the dough.
  6. Drop dollops of dough onto the prepared baking sheet, spacing them about two inches apart. Bake for 10-12 minutes or until the edges are golden brown.
  7. Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Store leftovers in an airtight container for up to a week or freeze for up to three months.
