Delicious and nutritious brownies made with black beans, offering a guilt-free sweet treat.

Ingredients

  • 1 can black beans, drained and rinsed
  • 2 large eggs
  • 1/4 cup cocoa powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup peanut butter or almond butter
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. Combine black beans, eggs, cocoa powder, honey (or maple syrup), peanut butter, vanilla extract, baking powder, and salt in a food processor. Blend until smooth.
  3. Stir in dark chocolate chips.
  4. Pour the batter into the prepared baking pan and spread evenly.
  5. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the brownies to cool before cutting into squares and serving.

Notes

For extra fudginess, don’t overbake the brownies; check for doneness a minute or two early.
