A colorful and refreshing broccoli salad with cherry tomatoes, sunflower seeds, and a creamy dressing.

Ingredients

  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cooked bacon, crumbled (optional)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sunflower seeds
  • 1/2 cup Greek yogurt
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Combine the broccoli florets, halved cherry tomatoes, diced red onion, crispy bacon (if using), shredded cheddar cheese, and sunflower seeds in a large bowl. Mix well.
  2. Whisk together Greek yogurt, apple cider vinegar, honey, salt, and pepper in a small bowl until smooth.
  3. Pour the creamy dressing over the salad ingredients and toss gently until coated.
  4. Chill in the refrigerator for 30 minutes for enhanced flavors, or serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Veggies may soften in dressing.
