A healthier twist on the classic carrot cake, packed with flavor and nourishing ingredients.

Ingredients

  • 2 cups almond meal
  • 1 cup grated carrots
  • 1/2 cup natural sweeteners (like maple syrup or honey)
  • 3 large eggs
  • 1/4 cup coconut oil (melted)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine almond meal, grated carrots, and natural sweeteners in a mixing bowl.
  3. Whisk together eggs, melted coconut oil, and vanilla extract in a separate bowl.
  4. Pour the wet ingredients into the dry mixture and stir gently.
  5. Add the baking powder, cinnamon, and salt to the mixing bowl.
  6. Fold in the chopped nuts if desired.
  7. Pour the batter into a greased cake pan and bake for 30-35 minutes.
  8. Allow the cake to cool before transferring to a wire rack.

Notes

For a vegan option, replace the eggs with flax eggs. Store leftovers in an airtight container.
