Healthy Chicken Cauliflower Rice Casserole

A comforting and nutritious casserole made with tender chicken, cauliflower rice, and creamy ingredients, perfect for busy nights.

  • 1 pound chicken breast
  • 4 cups cauliflower rice
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup low-fat Greek yogurt
  • 1/2 cup reduced-fat shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the chicken breast into bite-sized pieces and season them with salt, pepper, oregano, and paprika.
  3. Heat olive oil in a large skillet over medium heat. Add the seasoned chicken pieces and cook until golden brown and cooked through, about 5–7 minutes.
  4. Add the chopped onion and minced garlic to the skillet. Cook until fragrant and the onion is translucent, around 2–3 minutes.
  5. Stir in the cauliflower rice and continue to cook for another 3–4 minutes until slightly tender.
  6. Remove the skillet from heat and stir in Greek yogurt, half of the shredded cheddar, and all of the Parmesan cheese until well combined.
  7. Transfer the mixture to a lightly greased 9×13-inch baking dish and sprinkle the remaining cheddar on top.
  8. Bake for 15–20 minutes or until the cheese is melted and the casserole is bubbly.
  9. Remove from the oven and let it rest for 5 minutes. Garnish with chopped parsley before serving.

Notes

Make sure to cut the chicken into evenly sized pieces for even cooking. Feel free to add other veggies like spinach or bell peppers for extra nutrition.
