A quick and satisfying skillet meal featuring ground turkey and fresh vegetables, perfect for busy weeknights.

Ingredients

  • 1 lb ground turkey
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning (optional)

Instructions

  1. Heat the skillet: In a large skillet, heat the olive oil over medium heat.
  2. Add the garlic: Add the minced garlic and sauté for 1 minute until fragrant.
  3. Brown the turkey: Add the ground turkey and cook until browned, breaking it apart with a spatula.
  4. Add the vegetables: Toss in the bell pepper, zucchini, and broccoli. Cook until the vegetables are tender, about 5-7 minutes.
  5. Season to taste: Season with salt, pepper, and Italian seasoning if using.
  6. Final cook & serve: Cook for an additional 2-3 minutes, then serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can substitute ground turkey with lean ground chicken or plant-based protein.
