Heart-Shaped Raspberry Mousse

A delightful and visually appealing raspberry mousse that’s perfect for special occasions.

Ingredients

  • 1 cup fresh raspberries
  • 1 cup heavy cream
  • ½ cup sugar
  • 2 teaspoons gelatin
  • 3 tablespoons water
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Puree the raspberries until smooth. Strain to remove seeds if desired.
  2. Sprinkle gelatin over water and let it sit for a few minutes to bloom.
  3. Heat the raspberry puree in a saucepan over low heat and stir in the bloomed gelatin until dissolved. Remove from heat and let cool slightly.
  4. Whip the heavy cream in a separate bowl until soft peaks form. Gradually add sugar, vanilla extract, and a pinch of salt, continuing to whip until stiff peaks form.
  5. Fold the cooled raspberry mixture into the whipped cream until well combined.
  6. Spoon the mousse into heart-shaped molds and refrigerate for at least 120 minutes, or until set.
  7. Carefully remove from molds and serve garnished with fresh raspberries.

Notes

Use ripe, fresh raspberries for the best flavor. Don’t overwhip the cream to keep the mousse light and airy.
