  • 2 cups all-purpose flour, sifted
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup milk (or almond milk)
  • 1 cup fresh blueberries (or thawed frozen blueberries)
  • 8 oz cream cheese, softened, mixed with ¼ cup of sugar

Instructions

  1. Gather your ingredients.
  2. Preheat your oven to 350°F (175°C).
  3. Prepare your loaf pan by greasing it or lining it with parchment paper.
  4. Whisk together flour, sugar, baking powder, and salt.
  5. Cream the butter and sugar until fluffy.
  6. Mix in the eggs one at a time and then add vanilla extract.
  7. Combine the wet and dry ingredients alternately with milk.
  8. Fold in the blueberries gently.
  9. Whisk the cream cheese and sugar until smooth.
  10. Layer half of the batter in the loaf pan, then the cream cheese mixture, and top with remaining batter.
  11. Bake for 50-60 minutes or until a toothpick comes out clean.
  12. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For an extra flavor twist, add lemon zest or substitute fruits.
