  • 2 cups rolled oats
  • 1 cup nuts (e.g., almonds, walnuts, or pecans), chopped
  • 1/2 cup honey or maple syrup
  • 1/2 cup nut butter (e.g., almond butter or peanut butter)
  • 1/2 cup dried fruit (e.g., raisins, cranberries, or apricots), chopped
  • 1/4 cup chocolate chips (optional)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. Combine the rolled oats, chopped nuts, and dried fruit in a large bowl.
  3. Mix the honey (or maple syrup) and nut butter in a saucepan over low heat until well combined and smooth.
  4. Stir in the vanilla extract and salt into the nut butter mixture.
  5. Pour the wet mixture over the oats mixture and stir until everything is evenly coated.
  6. Press the mixture firmly into the prepared baking dish, making sure it’s compact.
  7. Bake for 20-25 minutes until golden brown.
  8. Let cool completely before cutting into bars.

Notes

For a nut-free version, omit nuts and use seeds like pumpkin or sunflower seeds instead.
