A delightful dessert that combines the refreshing taste of lemon with a buttery crust, capturing the essence of summer.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup granulated sugar (for the filling)
  • 1/4 cup all-purpose flour (for the filling)
  • Zest of 1 whole lemon
  • 1/2 cup freshly squeezed lemon juice
  • 1/2 teaspoon baking powder
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×9-inch baking dish.
  2. Combine 1 cup of all-purpose flour and 1/4 cup granulated sugar in a mixing bowl. Pour in melted butter and mix.
  3. Press this mixture into the bottom of the prepared baking dish and bake for about 15 minutes.
  4. Whisk together 2 eggs, 1 cup granulated sugar, lemon zest, lemon juice, 1/4 cup flour, and baking powder in another bowl.
  5. Pour the lemon filling over the baked crust and spread evenly.
  6. Return to the oven and bake for an additional 20-25 minutes until set.
  7. Cool for 10 minutes, then chill in the fridge for at least an hour before dusting with powdered sugar.
  8. Cut into squares and serve.

Notes

For best flavor, always use fresh lemons. Let the bars cool completely for clean cuts.
