  • 4 boneless chicken thighs
  • 1 pound baby potatoes, halved
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Whisk together honey, soy sauce, minced garlic, olive oil, salt, and pepper in a large bowl.
  3. Coat the chicken thighs in the marinade.
  4. Prepare the roasting pan by placing the marinated chicken and halved baby potatoes inside.
  5. Pour any remaining marinade over the chicken and potatoes.
  6. Roast in the oven for 25-30 minutes, until the chicken is cooked through.
  7. Garnish with fresh parsley before serving.

Notes
