A delightful side dish featuring vibrant carrots and green beans, glazed with a sweet honey mixture that’s perfect for any meal.

Ingredients

  • 4 medium carrots, peeled and sliced into 1/4-inch rounds
  • 2 cups green beans, trimmed
  • 1 tablespoon salt
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 tablespoons honey
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • Fresh parsley, chopped (optional)

Instructions

  1. Prepare your vegetables by peeling carrots and slicing them into 1/4-inch rounds and trimming green beans.
  2. Blanch the vegetables in boiling salted water for about 3-4 minutes.
  3. Cool and drain the blanched vegetables under cold water.
  4. Create the honey glaze by melting butter and olive oil in a skillet, then adding honey.
  5. Coat the blanched vegetables with the honey mixture, adding seasonings.
  6. Heat through for an additional 5-7 minutes until the glaze thickens.
  7. Serve with love, garnished with parsley if desired.

Notes

If using frozen vegetables, adjust the blanching time accordingly. For a vegan version, substitute butter with margarine and honey with maple syrup.
