  • 4 boneless skinless chicken breasts
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 limes, juiced
  • 1 tbsp honey
  • 1 cup long grain rice
  • 1 1/2 cups water
  • 1/2 tsp salt
  • 1 ripe avocado, diced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Create the Marinade: In a bowl, whisk together the olive oil, minced garlic, ground cumin, paprika, salt, black pepper, juice of 2 limes, and honey to create a mouthwatering marinade.
  2. Marinate the Chicken: Add the chicken breasts to the marinade. Ensure they are well-coated, cover, and refrigerate for at least 15 minutes or up to 2 hours.
  3. Rinse the Rice: While the chicken marinates, rinse the rice under cold water until the water runs clear.
  4. Cook the Rice: In a pot, combine the rinsed rice, water, and 1/2 tsp salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 to 18 minutes.
  5. Fluff and Mix: After the rice has rested, fluff it up with a fork and stir in the diced avocado, chopped cilantro, and juice of the remaining lime.
  6. Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken breasts for 6 to 7 minutes per side.
  7. Rest and Slice the Chicken: Transfer the cooked chicken to a cutting board and let it rest for 5 minutes, then slice the chicken into strips.
  8. Serve the Dish: Serve the sliced chicken over the avocado rice, garnishing with extra cilantro or lime wedges if desired.
